For the mint, resist the urge to blend or muddle it hard — that releases the bitter compounds in the stems and leaves a slightly harsh edge. Instead, tear four or five leaves and stir them into the finished juice. Let it sit for two minutes, then fish them out. You get the fragrance without any bitterness.

Serve over plenty of ice, or refrigerate the juice first and skip the ice entirely if you don't want it diluted. Either way, drink it within about twenty minutes of squeezing — citrus juice oxidises quickly, and the bright top-note that makes fresh juice worth making starts fading fast.
